The only thing that changed between model years is the price. The main difference between models is 99 hp. 434 hp 2.9L TT in the S vs 335 3.0L T in the base.
If the S is low mileage and you can get it as a Porsche CPO, I would definitely consider it and DRIVE them both.
I have a 2020 S that I spec'd and it drives like a lifted C4S. I also use it to tow my track car.
I had a 2009 Cayenne S. I traded it in on a 2021 Base Cayenne. The two cars could not be more different. The new one is the car that the old one wanted to be. Better handling, faster, better pickup, better materials. More upscale.
